Savour genuine Louisiana style cuisine in the fun loving atmosphere of Be Mine. Take a lazy steamboat ride into the Deep South’s fabulous mixture of flavours and you too will join in the Louisiana love affair with food.

The unusual tastes of this cuisine has its roots first in the variety of different ingredients available to New Orleans early settlers, ingredients like oysters, shrimps, crabs, beans, rice, onions, garlic, green peppers, tomatoes, and of course the special root from which peppery Tabasco sauce is made.

The first settlers – French misfits, from all social classes and other Europeans – had to adapt their tasty French cooking to these new ingredients beginning the evolution of Louisiana style cuisine.

Later thousands of African slaves were shipped to New Orleans from Santo Domingo, an Ancient Spanish settlement in the Caribbean captured and colonised by the French. The slaves brought with them sugar cane (and thus rum), the Spanish love peppers, Africa’s cooking tastes and skills plus the more leisurely and festive of the tropics.

To complete this marvellous melting pot of international cuisines, the secret herbs and roots of the Choctaw and Chickasaw Indians native to the New Orleans area added the finishing touches to this flavoursome evolution.
